There are some vegetables mentioned below which are freely available in earth.
Fiddle head fern
The fiddle head fern is grown on the moisturized land in the jungle. This plant is classified in pteridophyte group, contains various nutrition are fulfilling daily needs of countryside people. It's not that rich people don't consume fern as a dishes, everyone prefer it for vegetable and are genuinely a tasty veg
Catbriers
This is the climbing plant yield wildly in the jungle or shed, famous in rural areas of Nepal. The tip of thread(stem) of a plant is first collected and prepared as a vegetable. A very nice curry of kukudyno might prepare if we cook it. Kukudyno is nutritious in nature.
Mushroom
Mushroom is widely distributed all over the world, mostly grown in the humus. It is very nutritious in nature, can provide useful nutrients to our body. Mushroom is available freely in the moisturized places and in jungle .
Jack fruit
Jack fruit is not a vegetable actually, it is a fruit which is preferred as dishes when it is unripened. We can prepare very tasteful gravy of jack fruit which looks like a meat. The side effect of this vegetables is producing thermal effect inside the body.
Bitter bean
Bamboo shoot
Bamboo Shoot can be used as a vegetable and pickle both. It is really good in taste and if we process for the pickle then it really gives the sour taste. Mostly in Nepal and India It have the best identity in the vegetable. It is one of the best and freely available vegetable source and easily available in the bamboo growing area. It is pronounce as TAAMA in Nepali. It have best chemistry with potato and solo in pickle.
Moringa(Sajina)
Moringa also known as Sajina in local language in Nepal. It is freely available in everywhere in the countryside. People show their interest in consuming Moringa's soup as well as gravy in dishes. It is much beneficial to the victims of high blood pressure. Moreover, the leaf 🌿 of Moringa is also eaten as making soup.
Benghal dayflower (kaane jhaar)
This plant (Benghal dayflower), also known as Kaane Jhar in Nepali. This plant is not actually a vegetable, rather than people use it for making fodder to their animals. Nevertheless, most of the people consume themselves it as a vegetable. Kaane Jhar is fulfilling the daily requirement of nutriment to the impoverished people.
Malabar Nightshade(Poisaag)
This plant is also widely available in Nepal. The local people call it as Poi Saag and take it as vegetable. It is nutritious as well as tasty in nature. Most of the people are growing this plant in own home also.
Sweet potato
It's an interesting one. The sweet potato 🥔 isn't actually taken as vegetable in Nepal in old days. But, at present nepalese consume sweet potato as as vegetable also. The upper tip of the leaf of this plant is also cooked as vegetable. The local people call it as 'Suthuni' in Nepali language.
